My Story
My name is Dominique. Born in Masvingo, Zimbabwe, I am from a French-Mauritian family who once had a coffee farm in Zimbabwe.

Heritage
I spent a number of years of my young adult life linked to my brother's coffee farm. This is where the passion for coffee began. I had a thriving business in the late 90's in London and more recently in the south of France where I sourced green coffee, roasted and sold to both private clients and to wholesalers. Having returned to my home in Mauritius, I have decided to get back to the basics of sourcing, small batch roasting and providing beans, to those who share my interest and love of an individually prepared brew.
Vision
I have always had a particular interest in the science of roasting. The chemistry, the precision, the way temperature and time unlock what is already there in the bean. It has become second nature to me now. I roast in small batches because that is the only way to get the best results.
The Craft
Roasting coffee is an act of listening. I approach each batch with patience and respect, seeking to reveal rather than reinvent what nature and careful farming have created.
What I Look For
Specialty coffee begins at its origin. Every bean roasted here meets strict criteria for quality, ethics, and traceability. The selection changes seasonally, but these principles guide every decision.

Traceability
Every coffee sourced can be traced back to specific farms, cooperatives, or micro-lots. Knowing exactly where the beans come from and who grew them is non-negotiable. This transparency ensures the best quality and allows for lasting relationships with producers.

Processing Excellence
How coffee is processed after harvest dramatically impacts its character. The focus is on producers who are meticulous, whether the bean is washed, natural, or honey processed. Clean water, careful fermentation, and proper drying are signs of a producer who cares about the final cup.
Small Farms & Micro-Lots
Small family farms and cooperatives take priority over large estates. Micro-lots, small batches from a single farm or even a specific plot, allow for showcasing exceptional quality and unique flavour profiles. Also, these coffees often tell a more intimate story.
