After years of roasting in France, I recently made the move to Mauritius to continue my coffee journey. Here, I'm bringing the concept of true micro-roasting to life: a philosophy centered on quality over quantity, where every batch receives the attention and care it deserves.

My setup is intentionally minimal: two Aillio Bullet roasters. This compact approach allows me to roast small batches with precision and consistency, focusing on bringing out the unique characteristics of each origin. When I'm not roasting, I dedicate time to sourcing exceptional coffees for the carefully curated selection I offer.

It's vitally important that I work with suppliers who share a commitment to ethical sourcing and Fair Trade principles. The roastery has become a warm gathering space, whether it's the gentle sounds of jazz, the rich aromas, or the chance to enjoy a perfectly pulled espresso. It's where passion meets craft, one small batch at a time.
